The 14 allergens we are required to declare

Under Regulation (EU) No 1169/2011 on the provision of food information to consumers, fourteen substances must be declared whenever they are used as an ingredient. They are:

  1. Cereals containing gluten — wheat, rye, barley, oats, spelt, kamut
  2. Crustaceans
  3. Eggs
  4. Fish
  5. Peanuts
  6. Soybeans
  7. Milk, including lactose
  8. Nuts — almond, hazelnut, walnut, cashew, pecan, Brazil, pistachio, macadamia
  9. Celery, including celeriac and celery seed
  10. Mustard
  11. Sesame seeds
  12. Sulphur dioxide and sulphites above 10 mg/kg or 10 mg/l
  13. Lupin
  14. Molluscs

How we label

  • Every jar carries the full ingredient list in descending order of weight, with declarable allergens set in bold, as Art. 21 of Regulation 1169/2011 requires.
  • Every jar carries a batch code and the date the blend was milled or the sauce was cooked, not just a bare best-before.
  • The deck on the label is the deck for that batch. When a grower’s lot changes and the recipe shifts — a different chilli variety, a different vinegar — the label changes with it. We do not print a year of labels in advance.
  • Compound ingredients are broken out. If a paste inside a kit contains mustard, you will read “mustard”, not “spices”.
  • Nutrition per 100 g and per portion is on the label and on the specification sheet we send wholesale customers.

Cross-contact, without the hedging

We make everything in one room. The same burr mill grinds Green Market, which contains celery seed, and Ember Rub, which does not. The same benches hold fish sauce on Wednesday and dry spice on Tuesday. We clean between products, we run allergen-containing lines last in the day, and we hold documented cleaning validation for the mill — but we cannot claim a segregated facility, because we do not have one.

So, plainly: if your reaction to celery, fish, milk, mustard, sesame, soya or gluten is severe, treat every Savora product as “may contain”. A precautionary statement that says “may contain traces” on everything is useless information, so instead we tell you what actually shares the room:

  • Handled in the kitchen weekly: celery, mustard, sesame, soybeans, fish, milk, gluten (wheat, barley), sulphites.
  • Never handled on site: peanuts, tree nuts, crustaceans, molluscs, lupin, eggs in shell.
  • Egg appears only as a sealed, third-party-made dried pasta inside Ragù Sunday and is never opened in our kitchen.

Vegetarian, vegan, and what “plant-based” hides

All six spice blends are vegan. Slow Red, Burnt Honey & Chilli and Black Garlic Ketchup are vegetarian; Burnt Honey contains honey, so it is not vegan. Green Sesame is vegan. Anchovy Butter Base is neither. Kits can be ordered vegetarian or vegan — see the meal kits page for what we swap.

Asking us a specific question

Write to [email protected] with the product and the batch code from the lid. We will answer with the actual batch deck, including the sub-ingredients of anything we bought in, usually the same working day. If you are ordering for someone with a diagnosed allergy, ask first and order second — we would much rather answer an email than replace a jar.

We are a registered food establishment NL-KIT-4471 with the Nederlandse Voedsel- en Warenautoriteit (NVWA), and our HACCP plan treats allergen management as a critical control point. How the food is actually made is on the how we make it page.
