Six blends, toasted whole and milled weekly in 40-jar batches. Heat is scored out of five so you can buy without guessing.

What each one is actually for
Ember Rub
The one we sell most of. Rub it dry onto chicken thighs or a whole cauliflower an hour before it goes in the oven; the muscovado catches and gives you the dark edges you want. Also the right thing in a pan of borlotti beans with a spoon of Slow Red.
Golden Hour
Turmeric and fennel pollen, which is expensive and worth it. Bloom a teaspoon in hot butter or oil for thirty seconds before you add anything else — dry from the jar it tastes like a health-food shop, bloomed it tastes like dinner. Rice, lentils, roast carrots, yoghurt.
Nightshade
Three smoked chillies and a spoon of cocoa nib, milled coarse. Heat 4 out of 5 and it climbs, so start at half a teaspoon. Built for short ribs, black beans, and anything you are going to leave in a low oven for three hours.
Green Market
No heat at all, and the blend our long-time customers reorder without thinking. Fold into soured cream for a dip, or into a bowl of grated cucumber and salt for the fifteen-second side dish that saves a plain piece of fish.
Cellar Salt
Coarse finishing salt with rosemary, bay and juniper milled through it. Use it on potatoes, on focaccia before it bakes, and on a steak after it rests — never before, because the herbs burn.
Winter Bark
Sweet spices with enough mace to work savoury. Braises with prunes, red cabbage, a plum tart, and mulled anything from October.
How to keep them alive
- Lid on, away from the hob. Steam is what kills a blend, not time.
- Best within four months of the milling date printed on the lid. Safe well beyond that, just quieter.
- Bloom anything with turmeric, cumin or coriander in fat. Add anything with dried herbs or citrus at the end.
