Eleven jars and bottles. That is the whole range, and it is deliberate — everything on this shelf earns its place by being used two or three times a week, not once a year.
We toast and mill in 40-jar batches every Tuesday in our Amsterdam kitchen, and we date the lid rather than printing a two-year shelf life and hoping. A blend that has been sitting for four months is a different, duller thing than one milled last week, and pretending otherwise is most of what is wrong with supermarket spice.
